What does the speaker mean when he says that his heart leaps up would it have been different if he had used jumps or hops or rises instead of leaps up

It wouldn’t exactly be different but hops or rises is grammatically wrong for the statement you are referring to. Moreover , leaps up is used for personification and it is better from the vocabulary angle. If you use jumps instead of leaps up , it won’t be wrong but it would be grammatically unattractive whereas if you use leaps up it look interesting. Remember, if the vocabulary is catchy and diverse it will be better.
