Vitamin c is associated with protein metabolism,especially the laying down of collagen in connective tissue.this vitamin soluble in water and easily distorted by heat,so cooking may be factor in the development of scurvy. Symptoms-swollen and spongy gums,anaemia,haemorrhage under the skin and in to joins,delayed wound healing.
