Hey there!
The microwaves are produced by an electronic vacuum tube called the 'Magnetron'.
The microwaves produced by the magnetron travel into the cooking chamber and the water molecules in the food that is being cooked to absorb them.
If there is no water - containing food in the cooking chamber, the microwaves will not be absorbed and they will find their way back to the magnetron.
Eventually, the magnetron will be absorbing as many microwaves as it is emitting and this could damage the tube.
For this reason, a microwave oven should never be run empty for more than a second.
