Baking soda(NaHCO3)contains sodium bicarbonate and also a weak acid i .e, cream of tartar in dry form.No reaction takes place in the dry powder but when water is added during cooking , a reaction takes place to release carbon dioxide to make the baked item rise.
That's all.

Carbonates and hydrogen carbonates are two other types of base. They also make a salt and water when we neutralise them with acid. But this time we get carbon dioxide gas too. The reaction fizzes as bubbles of carbon dioxide are given off.
