Sugar move from ‘ source ' to ‘ sink '.. Since there is less sunlight during winter so the tree can't produce much food and they conserve their energy. So, during the growing season, the mature leaves and stems produce excess sugars which are transported to storage locations including ground tissue in the bulbs or roots ( a type of modified stem ). Many plants lose leaves and stop photosynthesizing over winter.
