The food coming from the stomach is acidic and it has to be make alakaline ( alkali are the bases which can be dissolved in water) for the pancreatic enzymes to act on it. Therefore, liver secrets bile juice to act on the fats present in small intestine in the form of large globules which makes it difficult for enzymes to act on them. Bile salts break them down into smaller globules and causing emulsification (the process of breaking down of large fat globules into smaller fat globules) so that it can be absorbed easily by the finger like projection called villi which are present in the small intestine.
