It becomes unsaturated again and now we can add more solute to it.

Solubility of a solute increases with the increase of temperature. So when a saturated solution is heated, it become unsaturated and u can dissolve more solute in it. But when the temperature is reduced, the solution becomes super saturated and the added solutes precipitates or form crystals.
