when tomato is being boiled your are preserving it by making it free from pathogenic microorganism. if after boiling you put the tomato in ice water it is called blanching. the tomato will become softer and mushy.
when you boil potato gelatinisation occur where the starch granule swell therefore u potato increase in size and become softer(because of the boiling). when you crush boil potato nothing is really happening, it is just becoming smash potato . of course if you leave it in expose air it will dry out a little bit due to evaporation and if you dont out it in the refrigerator it will spoil
