Acetic acid is an organic acid , of molecular formula CH3COOH. It being an organic acid , is weak acid , and thus does not dissociate completely when dissolved in the aqueous solution. It would break into ethanoate ion and a proton , H+ , which gives the molecule it's acidic character .
When you add few drops of Acetic acid , it besides increasing the concentration due to release of H+ from its molecule ,will also force a neutral Water molecule to dissociate into H+ ions and OH- ions , thus overall there is an increase in the concentration of H+ and the solution becomes acidic and the pH lowers down less than 7.
