It is most likely to occur when the nucleus is 'proton rich', i.e. has fewer neutrons than other, more stable isotopes do. ... If, theoretically, this did happen in nature (which it doesn't) the product would be, as in a collider, a neutron and a neutrino (assuming the electron collides with a proton) :D.

The atom has a nucleus, which contains particles of positive charge and particles of neutral charge . An electron can become excited if it is given extra energy, such as if it absorbs a photon, or packet of light, or collides with a nearby atom or particle.
