sugar solution is concentrated as compared to the bacterial cells sofa bacterial cell the outer surrounding would be hypotonic so all the water from inside the bacterial cell would leave it and and joins outer solution this process is called as Osmosis that is the losing of water from the bacterial cells and shrinking of the cell itself ...
this phenomena place very important role in preserving the pickles coz in pickles the concentration of sugar and salt is very high so if the bacteria would grow inside the pickles and try to spoil it then they would die due to exosmosis that's why pickles can be easily preserved in our home also...just an extra punch to build ur concept ...hope it helps
