WHEN BAKING SODA ALSO KNOWN AS THE SODIUM HYDROGEN CARBONATE IS USED IN MAKING CAKES BECAUSE IT CONTAINS BAKING POWDER WHICH IS THE MIXTURE OF BAKING SODA AND AND MILD EDIBLE ACID TARTARIC ACID.

WHEN BAKING POWDER IS ADDED TO THE DOUGH WITH THE LITTLE AMOUNT OF WATER THEN SODIUM HYDROGEN CARBONATE REACTS WITH TARTARIC ACID TO EVOLVE CO2 .AND AS A RESULT CO2 GAS PRODUCED GETS TRAPPED IN THE WET DOUGH AND BUBBLES OUT SLOWLY CAUSING IN THE RISE OF THE CAKE MAKING IT SOFT AND SPONGY.
