The sugar does not turn into alcohol by itself. It requires yeast. Yeasts can digest simple sugars very easily. They can digest complex sugars by creating enzymes which convert the complex to simple sugars. Some sugars are very difficult for yeast to digest so these stay in and contribute flavors. Alcohol is a waste product of the yeast's digestion, CO2 is another waste product. The yeast can continue to multiply and eat sugar until the alcohol content gets too high. Then the alcohol "poisons" the yeast and fermentation stops. The details are actually rather complex and there are experts who have studied this process for many years and they still do not understand everything about it. Humans have only been doing it for about 3000 years.
