Answer. When hydrogen is added to a vegetable oil it changes into a solid form called vanaspati ghee in the presence of nickel called catalyst through the process of hydrogenation.

Vegetable oils are unsaturated fats having double bonds between some of their carbon atoms. When a vegetable oil is heated with hydrogen in the presence of finely divided nickel then a saturated fat called vegetable ghee is formed. This reaction is called hydrogenation of oils. ,
Vegetable oils is in liquid state at room temperature whereas vegetable ghee(sturated fat) is solid( or semi-solid) at room temperature.
Nickel acts as a catalyst in the process of hydrogenation of vegetable oil .
