When milk is left open at room temperature during summer seasons, the milk gets affected to the heat and causes the bacteria to proliferate, which means to increase the number of bacteria very rapidly, the bacteria present in milk is lacto bacillus , when this bacteria increases it's number, the milk will start tasting sour and we might experience bad smell from it. We know this saying, anything too high or too less is bad, the same thing applies here.

If we keep milk at room temperature,in an open system, then the milk may get oxidised. It causes bacteria to proliferate and eventually lower the pH. Thus, causing its sour taste and sometimes bad odour.
