Most tap water from the ground contains calcium that's dissolved in the water. When you boil it the tiny amount of calcium in each pot deposits on the bottom of the kettle as calcium carbonate where it boils first.

Those deposits are from calcium (and other) carbonates dissolved in water. This is commonly called hard water. As water boils or evaporates from droplets say in the shower, these minerals precipitate. Acid is the answer for these deposits.
