Some plants store excess food as starch or fat, usually in a storage root, tuber or similar structure. However, most excess food is diverted to new vegetative growth or to the seed/embryo. Plants will make more photosynthetic tissue if nitrogen is available along with extra sugars, or they will make more root if nitrogen is in short supply. If seed development is occurring, then all energy will be diverted to the growing embryos.

Storing the food helps them to use it in winter and survive because there is very little sunlight available and so they photosynthesis less. For example, carrots store food in its roots and live on it all winter and in summers a new plant grows from these roots.
