Earth is generally provided to ground the fault current which may arise due to multiple situation. Sometimes the insulation of wires inside instrument are removed at some points & and it get in contact with outer metallic part, then there is a risk of shock.

Also in some cases earth is required for some instrumemts/Appliances to work properly, such as Instruments which have IC’s .
