This carbon dioxide gas gets trapped into the dough and bubbles out which causes the cake to rise making it soft and spongy.

Baking powder is substance formed when a mild edible acid such as Tartaric acid reacts with bakibg soda(NaHCO3). When Baking powder is heated:

NaHCO3 + H+ -----> CO2 + H2O + Sodium Salt

Here the CO2 gas evolved helps in rising of cakes and breads while heating and helps in making them soft and spongy.
