CURD or LEMON is added to make dal sour.

But why?

  • First of all, let's know the composition of curd and lemon !

  • Curd mainly contains lactic acid produced by Lactobacillus bacteria from milk.

  • Lemon mainly contains Citric acid.

Organic acids are extremely sour in taste, hence they are added to pulses during cooking in order to make them taste sour.

Now, what's the use of sour dal?

  • Sour dal/ or pulses are eaten in various regions of India with Roti, Rice and other wheat products, etc.

  • They are also an important source of plant proteins necessary for body building, etc.
