Assimilation in biology is the process through which an organism incorporates nutrients from outside its body to the more complex structures needed inside of it. The most simple of life forms, a single-cell organism, does this via direct intake through the cell wall.

Biological assimilation is the combination of two processes to supply cells with nutrients. The first is the process of absortion of vitamins, minerals, and other chemicals from food within the gastrointestinal tract. In humans this is done with a chemical breakdown (enzymes and acids) and physical breakdown (oral mastication and stomach churning).
