baking powder is sodium bicarbonate NaHCO3
when it is added to food and heated CO2 gas is liberated
NaHCO3---------(Heat) Na2CO3+H2O+CO2
the releasing of CO2 makes the bakery products ie cakes, breads etc loght and spongy

Here's the answer :-
Baking powder is actually a weak base of sodium. It is sodium bicarbonate. Its formula is NaHCO3.
Let's say that we add curd or lemon juice to a mixture of dough with baking powder, the lactic acid of curd or citric acid of lemon juice reacts with the baking powder and creates a salt along with slow and spontaneous release of Carbon dioxide.
When the dough is properly mashed, the mixture gets uniformly spread and hence the carbon dioxide gets trapped in the dough through the pores and hence when baked, the CO2 gas expands and the water of the dough gets evaporated. Thus it becomes fluffy and sometimes crisp.
The decomposition of baking powder on heating :-
2NaHCO3 ---(heat)---> Na2CO3 + CO2 + H2O
