Baking powder is a mixture of baking soda and an edible acid such as tartaric acid or citric acid.

When baking powder is added to water it reacts with acid (like tartaric acid or citric acid) to form carbon dioxide. This carbon dioxide trapped in the wet dough and bubbles out slowly making cake soft and spongy.

Mixture of sodium bicarbonate and cream of tartar, used instead of yeast in baking.

Baking powder is mixed with the flour. When water is added to this flour to make dough, baking powder undergoes a chemical reaction during which carbon dioxide gas is produced. This carbon dioxide gas gets trapped into the dough and bubbles out which causes the cake to rise making it soft and spongy. hope this helps u....
