Hamburger phenomenon is actually a simple concept

it is the diffusion of Cloride ion from plasma to RBC inorder to regain the equilibrium that is lost due to the diffusion of bicarbonate ions from RBC to plasma

It is also called as chloride ion shift

In tissues, pCO2 is high due to respiration; CO2 diffuses in blood (RBCs and plasma) and forms HCO3- and H+.

HCO3- diffuse out into plasma and Cl− enter RBCs at tissue level (internal respiration). This is called Hamburger's effect or chloride shift.
