Charring of sugar is a chemical reaction. Let me explain this : First, we will take a small amount of sugar in a small china dish and start heating it. Then we will observe that the sugar melts, become brown and then black. We will stop heating till a black powdery substance is left in the dish.

This black substance is known as charcoal and this process is known as CHARRING OF SUGAR.
