CHITANASE are hydrolytic enzymes that break down glycosidic bonds in chitin. As chitin is the components of cell wall of fungi and exoskeletol elements of some animals chitinases are generally found in organism that either need to reshape their own chitin or dissolved and digest the chitin of fungi or animals.
