crystallization happens with the help of water. You need to have some water for the crystals to form. For eg if you take sugar and dissolve it in water and than heat the solution until the water is boiled off than you wont get sugar crystals you will get the sugar in powder form. for the crystallization to be possible it is necessary to leave some water behind and let that little bit of water evaporate itself so the water thats need for the crystallization is consumed by the atoms or molecules. moreover this water is called water of crystallisation
