Pasteurized milk is first concentrated in an evaporator to approximately 50 percent milk solids. The resulting concentrated milk is then sprayed into a heated chamber where the water almost instantly evaporates, leaving fine particles of powdered milk solids. Alternatively, the milk can be dried by drum drying.


Glactose:- It has no function in and of itself; it's merely a molecule like any other. However in terms of metabolism, galactose can serve as a cell's source of energy by being converted to glucose, which is the primary fuel for cellular energy extraction.

In short evaporation of water from milk to convert it in powdered form is dehydration of milk.

Function of galactose is :

Galactose is a monosaccharide and when combined with with glucose, it makes lactose. Well, but instead of combining we usually break it down in our body. So we get lactose from milk products and using lactase we break it down to glucose and galactose.

Galactose is less stable than glucose and thus can go on to form different conjugations. Therefore many species have a way of a quickly converting galactose into glucose. So we can say that galactose can technically function as glucose as well.

Furthermore, it's used as an aging model. When rats, and some type of small flies are exposed to galactose, their aging process is accelerated. I assume this is used when scientists (in genetics) need to go through several generations of a species to examine mutations and such. I don't know much about this since I haven't studied that area or well versed in that part of the subject.
