Dehydration synthesis involves the formation of new chemical bonds between two molecules which leads to the formation of new compounds. The loss of water molecule can occur due to reaction between two functional groups like –OH, -NH2 or –COOH. It is also called a condensation reaction.

Dehydration: Excessive loss of body water. Diseases of the gastrointestinal tract that cause vomiting or diarrhea may lead to dehydration. There are a number of other causes of dehydration including heat exposure, prolonged vigorous exercise, kidney disease, and medications that cause voiding (diuretics).
