dehydration of food is the process of completely eliminating all water from a food item and freezing it to sub zero temperatures, to prevent it from going bad. The process is also called "Freeze-Drying" and is a method of food preservation. food preserved by this process have a shelf life of up to 10 years. The food can be rehydrated or the water can be added back to be consumed.

This method proves to be a boon and is widely used for preserving food of astronauts, soldiers and is also used in survival kits.
