Broilers are fast growing and can reach a weight of 2+ kg in as little as 5 weeks, at which time they are processed for meat. They are muscular with a very high proportion of leg, thigh and especially breast muscles. Being processed so young makes the meat very tender but somewhat less flavorful.
Layers are strains bred to be more skinny but are prolific egg producers (up to 300 eggs per year). They start laying typically at around 20 weeks age (depending on the variety). After laying they can be processed in different ways depending on the country or region. Some countries relish the gamey taste and texture of a spent hen meat, while others use the meat in pet foods.
