Drying or dehydration is, by definition, the removal of water by evaporation, from a solid or liquid food, with the purpose of obtaining a solid product sufficiently low in water content. The main technological objectives of food dehydration are:

Drying is the process of removal of solvent from a solid, semi-solid or a liquid whereas dehydration is the removal of water from the water-containing compound. But we have to control the conditions such as humidity and temperature for the dehydration purpose.
