The breakdown of fat globules in the duodenum into tiny droplets, which provides a larger surface area on which the enzyme pancreatic lipase can act to digest fats into fatty acids and glycerol. Emulsification is assisted by the action of the bile salts (see bile). Emulsification of fats is necessary because a fat globule has large surface area foe enzymes to act upon it. Emulsification reduces the surface area and then more enzymes can act upon it and thus can produce more energy.
