The process of production of emulsion is known as Emulsification.
EXPLANATION:
The “Emulsification” is the process in which the breakdown occurs on large fat globules in to a small fat globule by the bile acid with a lower surface tension is known as Emulsification.
Here the emulsion is made by allowing the fat to mix with the water with equally spread. The fat which gets spread should be equally spread in the water with equal amount of fat.

Emulsification is the process of emulsion formation of phases of two immiscible liquid.
Explanation:
- Emulsification is the property of surface-active agents which is used for practical applications.
- A lot of studies has been done extensively on emulsifiers.
- In this dispersing one immiscible liquid into another immiscible liquid takes place. This is known as emulsification.
- Detergents and soaps are common emulsifying agents.
- By mechanical mixing using different types of mixers the ingredients of the emulsion are mixed and used in industries.
- The emulsification works with certain aims. At first it ensures the physicochemical stability of the product.
- The process of emulsification helps to determine the characteristic structure and ensures the moisture separation while doing cooking.
- Secondly, it help to create a typical sensory property say appearance, texture, flavour or noise.
