It is the formation of a layer around the solute which is dispersed.
It helps for the body by keeping the solute equally dispersed.

the breaking of large globules of fat into simpler one ,so that pancreatic juice easily act on it is called EMULSIFICATION OF FAT.

t is useful in  the case of digestion of fat.the pancreatic juice contain lipase which digest the fat .but due to large globules of fats,it not acts on it.but bile juice breaks into simpler ones and thus provide easy way to digest fat which ultimately useful for the body.
