the breaking down of large insoluble fat gobules into small soluble fat goblules is called emulsification.
the gland is liver. which is related to it and it's secretion is bile juice and bile salts... which orovide alkaline medium ....

Emulsification means breaking of fat molecules into small globules.

Liver is the largest gland of the body. Liver secretes a watery fluid, alkaline secretion, known as bile. It contains bile pigments and bile salts.The bile secreted by the liver cells is concentrated and stored in gall bladder.

Bile does not contain any enzyme. But it serves to alkaline the medium of duodenum. It also helps to emulsify fats.
