Emulsification is the process of breaking down the fat into smaller blood cells which makes it easy for enzymes to function and digest food. Fat emulsification helps digest fats into fatty acids and glycerol that are easily absorbed by the small intestine.

Emulsification is a vital process in the digestion. As the food reaches the small intestine it receives the bile juice secretion (from the liver). The salts present in this bile juice are responsible for breaking the bigger fat droplets in the smaller ones. This process is called emulsification of fats.
