Epidermis is a flap like structure made up of cartileges at the top of trachea which prevents the enterence of food in the respiratory tract as it blocks the trachea during swallowing and after the food is swallowed, it reopens to continue the process of respiration.

That is why, you will observe that when you are swallowing something, you do not breath.
