Fermentation is a metabolic process that converts sugar to acids and gases, or alcohol. It occurs in yeast and bacteria, and also in oxygen-starved muscle cells, as in the case of lactic acid fermentation.

There are two types of respiration in which in ANAEROBIC respiration the following reaction takes place :-
ETHANOL + Co2 + H2O in lack of oxygen .
in this process ethanol(alcohol) is produced and this process at commercial level is called fermentation.
