Fermentation is the process of anaerobic respiration carried out by yeast and anaerobic bacteria. It involves the incomplete breakdown of glucose to form ethyl alcohol/lactic acid/citric acid, carbon dioxide and a little bit of energy.

Glucose -----> ethyl alcohol + CO2 + 2ATP
