Fermentation is mainly a metabollic process. This process is carried out by microorganisms and bacteria.

They basicaly turn carbohydrates llike starch and sugar into either an alcohol or an acid. The microorganisms covert carbohydrates, starch and dugar into alcohol.

This is the way how yeasts gain energy. Bcateria performs the task of fermentation by converting carbohydrates into latic acid to obtain energy.
