Some fermentation processes involve obligate anaerobes, which cannot tolerate oxygen. Although yeast carries out the fermentation in the production of ethanol in beers, wines, and other alcoholic drinks, this is not the only possible agent :- bacteria carry out the fermentation in the production of xanthan gum.
