The gastric chief cells of the stomach secretes enzymes for proteins breakdown. HCL activates plasminogen into enzymes pepsin, which then help digestion by breaking the bonds linking amino acid a process known as proteolysis

After the process of ingestion when food passes through oesophagus and reach in the stomach or Gastric gland there the process of digestion starts and there essential process are done where HCL helps in killing of germs or bacteria present in food and it also provide acidic nature to pepsin (it helps to broke protein molecules into amino acid and required acidic environment to do this ).
