The removal of crop after maturity is called harvesting. The harvested grains called produce represents crop yield.

Harvesting is done manually with the help of sickle in crops such as wheat, paddy, maize and sugar cane. In harvesting of horticultural operations, fruit and vegetables are hand plucked. Tractor-driven machines are also used for harvesting.

Sometimes both harvesting and threasing are done simultaneously by machines which are called combines.
