Acid from the stomach along with enzymes secreted from the stomach, small intestine and pancreas do a great job of breaking down protein, fat and carbohydrate to small molecules that we can then absorb. Bile salts from the liver and gall bladder help to emulsify fats so they can be better absorbed. Bacteria, primarily in the colon, produce enzymes that help break down fiber we consume.
