Well, the IRS isn't all that accurate, and errors do increase with time. That is why, in practice, in an area of dense sensor coverage an IRS fix comes last in order of priority, VOR and DME (and now GPS) giving better results.
As to height accuracy, a lateral error of a nautical mile or so is acceptable, but a height error of this order is not, so we don't use the IRS for raw height.
