INVERT SUGAR

Sucrose is dextrorotatory (+66.5°) but after hydrolysis it gives an eqimolar mixture of D-(+)- glucose and D-(-)- fructose, which is laevorotatory. This change of specific rotation from dextrorotation to levorotation is called inversion of sugar and the mixture obtained is called invert sugar.
