In general terms, "Rancidity" can be defined as the phenomenon in which fats and oils get oxidised and get damaged.

  • The items which get damaged through rancidity, are referred to as "Rancid" items.

  • When a substance becomes rancid, it's smell and taste changes adversely.

  • To avoid rancidity, oxidation preventing substances are added to food items.

  • The substances which prevent oxidation, are known as "Antioxidants".

  • Oxidation of fats and oils (Rancidity) can also be avoided by storing fat containing or oily food items in air tight containers.

  • Example - Manufacturers of chips usually flush the packets of chips with non-reactive Nitrogen gas to prevent the chips from getting rancid.
