Lactobacillus is a genus of Gram-positive, aerotolerant anaerobes which converts sugar into lactic acid

it is important because it produces lactase which convert milk sugar lactose into lactic acid. It partially digest milk protein casein. Lactic acid causes coagulation of protein to form curd. Curd is better than milk as its remove lactose to which some persona(not Indian ) are allergic. It contain B12 and other vitamin. It also check growth of disease causing and other harmful microbes in curd.
