Rancidity is a term generally used to denote unpleasant odours and flavours in foods resulting from deterioration in the fat or oil portion of a food. Three different mechanisms of rancidity may occur. These are oxidative, hydrolytic, and ketonic. Oxidative Rancidity.

The slow destruction of oil and fat containing food items giving bad smell and taste is called rancidity

Rancidity happens in the presence of moisture and air. You can understand why chips etc. are packed in air tight bags which contains nitrogen

Some ways to prevent rancidity are:

REFRIGRATION
Most common and effective way. Ex. Everyone stores milk etc. in refrigrator


FlUSHING WITH NITROGEN
For prevention of rancidity food items are flushed with nitrogen


KEEP AWAY FROM SUNLIGHT


USING FOOD PRESERVATIVES LIKE TURMERIC ETC. 


STORING IN A COOL AND DRY SPACE
